At Cavendish Venues we know we have a responsibility to future generations. Part of that means doing all we can to minimise our impacts on the environment. To this end we have already taken many steps: minimising energy and water use via verifiable reduction targets / zero to landfill policy / continuous programme aimed at reducing food waste etc etc.

While all of this is important, ITS NOT ENOUGH. We are considering offering a discount to organisers who choose a chef’s choice vegan menu. The benefits to the environment are significant:

• Livestock production contributes 18% of human produced greenhouse gases
• Meat production is unbelievably inefficient, to produce 1kg of meat requires 25kg of grain and 15 000 litres of water
• In the UK we throw away approx. 7,000,000 tons of food away. We believe that if we offer 10% of delegates a chef’s choice vegan diet, we could significantly reduce our food waste percentage.

That’s not to say that there’s not a place for livestock production, large tracks of land are not suitable for arable, human ethical limited livestock production balanced with carbon capture could well be the best use for much of this acreage.

On balance its clear that we need to reduce our environmental impacts, to achieve this globally we need to significantly increase the non-meat elements in our diet. One way to do this is to promote veganism.

As a company we have recently been carefully pricing up a number of vegan diets. Surprisingly the food cost are only slightly less than a traditional conference menu. This is counterbalanced by the fact that the staff cost are slightly higher, the preparation of vegan menu’s for us is slightly more labour intensive.

That begs the question, should we offer a subsidised vegan menu, we would really appreciate your feedback!
