Gill’s Lockdown Birthday Soup

The cupboard was bare. So, harnessing our inner foragers, we collected wild nettles and wild garlic. We could have really got into the spirit of things by singing folk songs and wearing dandelion garlands as we gathered. Why not? Instead we hurried home, and as we were unable to find an enticing recipe for nettle birthday cake, we made nettle soup instead.

Delicious and healthy as it was, it has to be said that even better was the moment earlier that morning when the fella was opening his birthday card, as he enquired, in a faintly disapproving tone “What are you wearing, G?” No need for me to utter. Perfect timing. Best card ever. He read “Never Laugh at Your Partner’s Choices. You are one of them”.

For anyone tempted to make nettle soup, here is our version:

Large bunch of nettles
Large bunch of wild garlic leaves
Onion, thinly sliced
Veggie Stock
Seasoning

Soften onion in olive oil or butter, add about a litre of veggie stock, bring to the boil, add nettles and wild garlic leaves, simmer for about 10 minutes, add seasoning, give it a blitz, et voila.

Perhaps Cavendish Venues’ fabulous caterers, Mayfair Catering, might like to consider offering a wholesome Nettle Soup option when we re-open our beautiful conference venues. I have no doubt it would be a fancier version than our simple homespun one. As a virtual vegan, I can unreservedly vouch for the quality and deliciousness of the many vegetarian/vegan options available at Cavendish Conference Centres, where lunch is always a highlight of the day.
